Grandma's Pumpkin Bread

When I used to visit Grandma during the holidays, I was always sure to go home with a loaf of pumpkin bread. Grandma can't make it for me anymore, but I bring her a loaf every Christmas and I always make extra to freeze. Thaw it out on Christmas Eve and it makes a quick & easy breakfast for Christmas morning!


Ingredients:

  • 1 ¾ cups flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • 2 eggs
  • 1 cup pumpkin puree
  • ½ canola oil
  • ⅓ cup water
  • ½ teaspoon vanilla

Directions:

1) Mix dry ingredients
2) Mix wet ingredients separately
3) Make hole in middle of dry ingredients; pour in wet ingredients
4) Combine with mixer
5) Bake at 350 degrees for 1 hour or until bread starts to pull away from the sides
Makes 2 small loaves or one large loaf of bread
