Great Grandma's Chocolate Pie

Nobody made it like Great Grandma with a pinch of this and a dash of that. As I watched her age, I also watched intently as she made this pie without a recipe every time! This will be the first Christmas that Great Grandma won't be with us, but her Chocolate Pie always will...the tradition must go on!


Ingredients:

    Crust
  • 1 pie crust
    Filling
  • 1 ½ cups sugar
  • 3 heaping tablespoons cocoa
  • 3 egg yolks, beaten
  • 3 cups milk
  • 4 tablespoons margarine
  • 1 teaspoon vanilla
  • 3 heaping tablespoons corn starch
    Meringue
  • 3 egg whites
  • ¼ teaspoon cream of tartar
  • 6 tablespoons powdered sugar
  • Pinch of salt

Directions:

Crust
1) Prepare pie crust according to package directions

Filling
1) Mix together all ingredients for filling in pan on stovetop
2) Cook filling ingredients until thickened, stirring throughout
3) Pour into pre-baked pie shell

Meringue
1) Beat egg whites with cream of tartar on medium-high speed until soft peaks are formed
2) Add sugar by spoonfuls while beating on medium-high speed until stiff
3) Spread over filling
4) Preheat oven to 350 degrees; bake 12 - 15 minutes or until golden brown
