Pumpkin Cheesecake Muffins

I love all things pumpkin! These are not quick, but they're worth every minute. They're always a huge hit at parties, the office, or as a treat around the house, but do yourself a favor and make the time to make these.


Ingredients:

    Filling
  • 8oz cream cheese
  • 1 egg
  • 1 tablespoon flour
  • 1 cup powdered sugar
    Topping
  • ¼ cup sugar
  • 2 ½ tablespoons flour
  • ¾ teaspoon ground cinnamon
  • 2 tablespoons margarine
    Muffins
  • 1 ½ cups all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 eggs
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 2/3 cup vegetable oil

Directions:

Filling
1) Combine cream cheese, egg, flour and powdered sugar in bowl and mix well until blended and smooth
2) Set aside

Topping
1) Combine sugar, flour and cinnamon with whisk
2) Cut in margarine with pastry blender to dry ingredients until mixture is coarse and crumbly
3) Store in refrigerator until ready to use

Muffins
1) Line muffin pan with liners; makes 12
2) Combine with whisk - flour, cinnamon, nutmeg, cloves, pumpkin pie spice, salt and baking soda
3) Combine eggs, sugar, pumpkin puree and oil with mixer on medium-low speed until blended
4) With mixer on low speed, add in dry ingredients, mixing just until blended
5) Fill each muffin cup about 2/3 full with batter
6) Add a dollop of filling on top
7) Sprinkle with topping
8) Bake at 350 degrees for 14 minutes or until done
